Ingredients:
- 6–8 pickled herring fillets (soused herring, boneless)
- 2 small dill pickles, cut into thin sticks
- 1 small onion, thinly sliced
- 1 cup white vinegar
- 1/2 cup water
- 1 tablespoon sugar
- 1 teaspoon black peppercorns
- 1 teaspoon mustard seeds (optional)
- 1–2 bay leaves
- Fresh dill for garnish (optional)

Directions:
- Prepare the brine: In a small saucepan, combine vinegar, water, sugar, peppercorns, mustard seeds, and bay leaves. Bring to a gentle boil, then remove from heat and let cool completely.
- Prepare the fillets: Rinse the pickled herring fillets under cold water and pat dry with paper towels.
- Assemble the rollmops:
- Lay each herring fillet flat, skin side down.
- Place a slice of onion and a pickle stick at one end of the fillet.
- Roll the fillet around the pickle and onion, securing it with a toothpick.
- Marinate: Place the rollmops in a jar or container and pour the cooled brine over them, making sure they’re fully submerged.
- Chill: Cover and refrigerate for at least 12 hours (overnight is best) to allow flavors to meld.
