Ingredients:
For the Meatloaf:
- 2 lbs ground beef (80/20)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika (optional)
For the Gravy:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
- Salt and pepper, to taste
Optional Topping:
- 2 tablespoons ketchup or barbecue sauce
Directions:
- Preheat oven: Preheat oven to 350°F (175°C). Grease a baking dish or line with parchment paper.
- Prepare the meatloaf:
- In a large bowl, combine ground beef, breadcrumbs, milk, chopped onion, garlic, eggs, Worcestershire sauce, salt, pepper, and smoked paprika.
- Mix until just combined—don’t overmix, or the meatloaf will be dense.
- Shape the “mound”:
- Form the meat mixture into a mound shape (rounded top) in the center of the baking dish. This gives it a rustic, hearty appearance.
- Spread ketchup or barbecue sauce over the top if using.
- Bake:
- Place in the oven and bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
- Make the gravy while meatloaf bakes:
- In a small saucepan, melt butter over medium heat.
- Whisk in flour and cook 1–2 minutes until lightly golden.
- Gradually whisk in beef broth and Worcestershire sauce.
- Simmer until thickened, 5–7 minutes. Season with salt and pepper to taste.
- Serve:
- Let the meatloaf rest 5–10 minutes before slicing.
- Pour gravy over slices or serve on the side for dipping.
Chef’s Tip:
For extra flavor, sauté the onions and garlic before adding them to the meatloaf. This adds a deeper, sweeter flavor and makes the mound even more irresistible.
