On the threshold of the old year and the new, Janus’ Jubilee Ham is said to be crafted by the very worker of time himself. Its spiral layers glisten with caramel apple nectar, infused with magic that balances the sweetness of memory with the thrill of what is yet to come. Toasted marshmallows erupt like fleeting moments, crushed pretzels crackle like echoes of the past, and chocolate drizzles shimmer like starlight guiding the future. Ingredients
For the Ham:
- 1 fully cooked spiral-cut ham (8–10 lbs)
- ½ cup caramel apple reduction (see below)
- ½ cup maple syrup
- ¼ cup Dijon mustard
- ¼ cup brown sugar
For Toppings/Coatings:
- 1 cup mini marshmallows
- ½ cup crushed pretzels
- ¼ cup chocolate drizzle (white or milk chocolate)
- Optional: edible glitter or colored sanding sugar for carnival sparkle
Caramel Apple Reduction (for injection):
- 1 cup apple cider
- ½ cup brown sugar
- 2 tbsp butter
- ½ tsp cinnamon
Directions
- Preheat oven: Set oven to 325 °F (160 °C).
- Make the caramel apple reduction: In a small saucepan, combine apple cider, brown sugar, butter, and cinnamon. Simmer over medium heat until reduced by half and syrupy (~10–15 minutes). Let cool slightly.
- Inject the ham: Using a meat injector, evenly inject the caramel apple reduction throughout the spiral-cut ham (~2–3 tbsp per pound).
- Prepare the glaze: In a small bowl, mix maple syrup, Dijon mustard, and brown sugar. Brush generously over the ham.
- Bake the ham: Place ham flat-side down in a roasting pan with a little water in the bottom. Bake for 10–12 minutes per pound, brushing additional glaze every 20–30 minutes to build a sticky, caramelized surface.
- Add toppings: In the last 15 minutes of baking, sprinkle mini marshmallows and crushed pretzels over the top to toast lightly and become slightly gooey and crunchy.
- Finishing touches: Remove ham from oven. Drizzle chocolate over the top and sprinkle edible glitter or sanding sugar for a carnival sparkle effect.
- Rest and serve: Let ham rest 10–15 minutes before slicing along the spiral cuts. Serve warm, celebrating the duality of the old year and the new.
✨ The Tale of Time Tips: Garnish with edible glitter, orange slices, or rosemary sprigs for a mystical, celebratory presentation. Pair with sparkling cider, caramelized vegetables, or a bright fruit salad to complement the sweet-and-salty carnival flavors.
